Though my index finger was aching from the rotary cutter incident, it didn’t hurt enough to keep me from baking. I had read about these Red Velvet Cake Sandwich Cookies on Nic’s food blog<\/a> (recipe here<\/a>) and had to try them out. I love Red Velvet Cake, and these were little sandwich cookies with Mascarpone Cream Cheese Frosting squished in the middle. Yowza.

\"red<\/a><\/center>These little guys were fun to whip up. The cookies are rather soft and reminded me of muffin tops. I didn’t have mascarpone, so I made a basic cream cheese frosting with 1\/2 stick of unsalted butter, 1\/2 a brick of cream cheese, a splash of vanilla extract, and 2 cups of powdered sugar. These cookies are really perfect for frosting lovers who feel sad after they’ve eaten the top of a cupcake and have frostingless cake remaining. I was really happy to be able to share these with Action Hero Melissa<\/a> and Susan<\/a>, who is up visiting from LA. Poor Sister Diane<\/a> can’t eat sugar, so she got nothing (hey Diane, I’ll use Splenda next time!).
