\nAnyway, I have really been a lazy bum. I have not been knitting or sewing or doing much of anything except passing out in front of the TV. And in keeping with my lazy ways, yesterday I searched for a one-bowl chocolate cake recipe, and I think I found a winner: the One-Bowl Chocolate Mocha Cream Cake<\/a>. The recipe is from Cooking Light and uses mayo and coffee as the moistening agents. The cake came out quite fudgy and chocolatey, so the fluffy, whipped cream-like mocha frosting paired nicely with it. It’s definitely a keeper! The recipe makes a 13 x 9-inch cake, so it’s pretty large. Unless you’re serving a big group of people, I would suggest maybe cutting the cake in half and frosting just that half (since the frosting has a whipped cream base, you can’t really leave it out overnight), or maybe going with a more traditional frosting would work?
