I don&#8217;t know if it&#8217;s because it is pasta disguised as rice, the whole yin-yang\/carb-carb thing, but I just like it.<br \/>\n<a href=\"http:\/\/www.supereggplant.com\/archives\/orzo salad.JPG\"><img loading=\"lazy\" decoding=\"async\" alt=\"orzo salad.JPG\" src=\"http:\/\/www.supereggplant.com\/archives\/orzo salad-thumb.JPG\" width=\"200\" height=\"150\" border=\"0\" \/><\/a><br \/>\nThis orzo salad is adapted from a recipe from Bon Appetit. Since nearly half of the ingredients are different, I figure it is a salad in its own right.<br \/>\nRead on for the recipe&#8230;<\/p>\n<p><!--more--><br \/>\nIt&#8217;s Greek to Me Orzo Salad<br \/>\n(measurements are approximate because I didn&#8217;t really measure. Oops. Just taste as you go along)<br \/>\nDressing:<br \/>\n4 tablespoons olive oil<br \/>\n4 tablespoons red wine vinegar<br \/>\na splash of apple cider vinegar<br \/>\na spoonful of dijon mustard<br \/>\na pinch of Italian herbs<br \/>\npepper to taste<br \/>\nGuts:<br \/>\n1\/2 box of orzo, cooked, drained, and cooled<br \/>\ncanned\/jarred artichoke hearts, chopped (I used half a jar of the Trader Joe&#8217;s hearts)<br \/>\n1\/3 cup pitted Kalamata olives, chopped<br \/>\nseveral spoonfuls of drained capers<br \/>\na handful of raisins or currants<br \/>\n3 small tomatoes, seeded and chopped<br \/>\n1\/3 cup feta cheese<\/p>\n","protected":false},"excerpt":{"rendered":"<p>There&#8217;s something about orzo that I find captivating.
