Flag day also happens to be my neighbor Sally’s birthday. I told her I’d make her the white trash pistachio cake (Carolyn<\/a> sent me the recipe) since she raved about it the last time I made it. I decided to convert it to cupcakes, since cupcakes are so festive (and also so I could have some!).

\nI posted the recipe the last time I made this, but who wants to go digging around the archives? Not me, so here’s the recipe again …<\/p>\n


\nTrashy But Oh-So-Yummy Pistachio Cake
\n1 box white cake mix
\n1 box pistachio Jell-O pudding mix
\n4 eggs
\n1\/2 cup oil
\n1\/2 cup water
\n8 oz container of sour cream
\nHeat oven to 325F. Grease or line cupcake tins with liners (I think I made about 18. I used one big cupcake tin and one small one). Mix all ingredients and divide. All recipes suggest filling to 2\/3 full, but I usually get more carried away. Bake the cupcakes about 20 minutes, or until a toothpick inserted into the center comes out pretty clean. Don’t overbake, or you won’t get the moist and fluffy goodness that can only come from a boxed cake mix.
\nFROSTING (optional)
\n1 container Cool Whip
\n1 box pistachio Jell-O pudding mix
\n1 cup milk
\nMix the pudding mix and milk together. Fold in the Cool Whip. Frost to your heart’s content. Actually, I would suggest frosting just before serving, because if you frost then leave the cupcakes out, the frosting gets kind of gummy from the pudding, and that is kind of unpleasant.<\/p>\n","protected":false},"excerpt":{"rendered":"
