It&#8217;s supposed to snow tonight but probably not very much.<br \/>\n<center><a href=\"http:\/\/www.supereggplant.com\/archives\/matcha latte2.JPG\"><img loading=\"lazy\" decoding=\"async\" alt=\"matcha latte2.JPG\" src=\"http:\/\/www.supereggplant.com\/archives\/matcha latte2-thumb.JPG\" width=\"260\" height=\"195\" border=\"3\" \/><\/a><\/center>Anyway, I did test out the Trader Joe&#8217;s matcha latte. I made it with water so I could really taste the essentials of the mix. It&#8217;s pretty thick stuff, and the matcha flavor is not particularly strong, but it&#8217;s not bad. Maybe if I mixed in some additional matcha powder? Anyway, it wasn&#8217;t disgusting, but it wasn&#8217;t delicious, either.<br \/>\n<center><a href=\"http:\/\/www.supereggplant.com\/archives\/angel cake.JPG\"><img loading=\"lazy\" decoding=\"async\" alt=\"angel cake.JPG\" src=\"http:\/\/www.supereggplant.com\/archives\/angel cake-thumb.JPG\" width=\"300\" height=\"225\" border=\"3\" \/><\/a><\/center>And now I will talk about cake! The other day I made Angel Cake from the September 2003 issue of Food &#038; Wine (wow, 2003. That&#8217;s old! I&#8217;ve been carrying around the recipe since then!). It has a marshmallow frosting, so it&#8217;s really pretty and shiny. When I was frosting it, Peter commented that the frosting looked just like 3M 5200 polyurethane (a classic boat polyurethane, apparently). So you see, his comments are not just limited to my wardrobe.<br \/>\nThe cake part was actually quite delicious&#8211;not too sweet and a good, substantial cake. The frosting, on the other hand, was really, REALLY sweet. It was fun to make, and I ate the frosting, but everyone else kind of scraped it off (except for the 3-year-old. She liked it). So, I think this cake would probably be more of a crowd pleaser if made with chocolate frosting.<br \/>\nRead on for the recipe &#8230;<\/p>\n<p><!--more--><br \/>\nAngel Cake with Marshmallow Icing<br \/>\nFood &#038; Wine, Sept 2003<br \/>\nMake one 9&#8243; layer cake<br \/>\n3 cups all-purpose flour<br \/>\n1 tablespoon baking powder<br \/>\n1\/4 tsp baking soda<br \/>\n1\/4 tsp salt<br \/>\n2 sticks unsalted butter, room temp<br \/>\n2 cups sugar<br \/>\n4 large eggs, room temp<br \/>\n1 cup buttermilk<br \/>\n1 tsp vanilla extract<br \/>\n1. Preheat oven to 350F. Prepare two 9&#8243; cake pans by buttering and flouring them. Sift the flour, powder, soda, and salt on a sheet of waxed paper.<br \/>\n2. Using a stand mixer (or an electric hand mixer if you must), beat the butter at medium speed until creamy. Add the sugar and beat until fluffy, about 2 minutes. Add the eggs, one at a time, beating well between additions. Turn the speed to low and beat in the dry ingredients in 3 additions, alternating with the buttermilk. Beat in the vanilla.<br \/>\n3. Pour the batter into the prepared cake pans. Bake in the center of the oven about 30-35 minutes, or until golden and a toothpick inserted into the center of the cakes comes out clean. Let the cakes cool in the pans set on a cooling rack  for 10 minutes. Turn out the cakes onto the rack and allow to cool completely.<br \/>\n4. Frost!
