muffins or cupcakes?

I am going crazy, but that has nothing to do with these Snickers & Peanut Butter Muffins I made. I read about these muffins somewhere, and what’s not to like? I had to make them!

I thought they would be more cupcake-like than muffinish, but really, they are more like muffins. Perhaps some chocolate frosting would alter them a bit. They actually weren’t as peanut buttery as I would have liked, but I think with some tinkering these could be really delicious.

Snickers and Peanut Butter Muffins
1 2/3 cup all-purpose flour
6 Tablespoons sugar
1 1/2 teaspoons baking powder (the original recipe said tablespoons, but that’s insane for muffins!)
pinch of salt
6 Tablespoons chucnky peanut butter
1/4 cup butter, melted
1 large egg, beaten
3/4 cup milk
3.5 full-size Snickers bars, chopped up into little chunks
Preheat oven to 350F (the original recipe said 400, but that seemed a bit high to me. I wanted a moist muffin, not a dry one!). Grease a 12-cup muffin tin or line with muffin cups.
Stir together the flour, sugar, baking powder, and salt. Add the peanut butter and mix until coarse crumbs form. In a separate bowl, combine the butter, egg, and milk. Add the wet ingredients to the dry, stirring gently. Mix in the Snickers chunks. Do not overmix! Divide batter among muffin cups. Bake 16-20 minutes or when the tops are golden and the muffins slightly firm when touched. Cool the pan on a wire rack for 5-10 minutes then remove the muffins to a wire rack and allow to cool.

    My older son Sam makes pancake cupcakes, so who knows! (pancakes out of cupcake batter-pretty good too)

    I think it has to do with the method of making them.
    You should try replacing part of the butter in a “plain” cupcake with pb and then stiring the snickers chunks through it. You don’t have to be so concerned about overmixing then either 🙂
    I am sooo tempted to make these though!

    Thank you for this muffins recipe–YUM! And they are muffins. Can’t wait to try these! A couple weeks ago I made a Snickers cheesecake, which was oh, so good. I seem to be in a see-what-all-you-can-make-from-Snickers phase…hehehe! Happy Days! :o)
